History
1969 : The department was sanctioned as per Government letter No. 77076/AH-3/68/AD dated 16-07-1969
1972 : 3 Lecturers were posted as per proceedings of the principal. No.E2-12067/71/dated 10-01-1972 of the principal, Kerala Veterinary College and Research Institute.
1976 : MVSc programme was started in the department.

Introduction
The dairy industry in India is undergoing rapid changes. In Kerala, milk production is mainly dependent on small farmers who have only two or three animals and only a few farmers maintain livestock farm for milk production. The milk produced by farmers is being sold to their neighbourhood, local shops or co-operative societies. These societies resale the milk as raw and part of it is transported to the plants where it is chilled, pasteurized and sold as pasteurized milk. During the period between the production and retailing of milk, it undergoes many changes in its various quality characteristics. The microbial quality of final product primarily depends on the quality of milk produced at the farmers’ / farm level. The microbial load of milk and its products influences the shelf life of milk, loss of valuable food due to spoilage and consumer safety. There is an increase in public awareness and concern among consumers regarding the presence of preservatives, neutralizers and adulterants in milk. The study will also help in developing a suitable HACCP and risk assessment based comprehensive quality assurance package for dairy industry in Kerala.
Objectives :
1. Conduct a detailed and systematic survey with regard to the current system of milk production and marketing from the producer to the consumer level.
2. Evaluate hygienic status of milk and identification of hazards at production, collection, chilling, processing, transportation and at retailers level.
3. Assess the presence of preservatives and adulterants.
4. Assess the transportation facilities and conditions leading to delivery of pasteurized milk and evaluation of pasteurized milk at the consumers level.
5. Evolve and implement HACCP module for milk processing plant and develop a suitable quality assurance package using the risk assessment tools on various dairy operations.
6. Conducting a State level workshop for the scientific community on quality assurance programme in the processing of milk and preparation of manual on clean milk production
